Whole-Wheat Sugar Cookies
 
Ingredients
·         1 1/4 cups flour
·         1/4 cup whole-wheat flour
·         1/8 teaspoon salt
·         1/2 teaspoon sodium free baking soda (you can purchase it at: )

·         4 ounces Salt Free Butter softened
·         1/3 cup granulated sugar
·         1/3 cup light brown sugar
·         1 egg white
·         1 1/4 teaspoons pure vanilla extract
·         1/4 teaspoon pure almond extract
 
When you mix this together it will look a little crumbly-that is okay.  I put this mixture
On some clear wrap and form it into a log (It is just easier for me to do this way). Put the
cookie dough in the freezer for a couple of hours to get good and firm.
 
After a couple of hours-take cookie dough and slice it thin for crisp cookies or ¼ thick for soft cookies.  Place the cut cookies onto a cookie sheet lined with parchment paper.  Take an egg white and add a little water and brush the top of the cookies with it. Bake for 12 minutes on 350 degrees.   These cookies really are good…I am sure you are going to enjoy them, and just think how pretty they are with that beautiful edible glitter. **giggles** you know how us fae love things that sparkles!!!!!

Apple Carrot Breakfast Bread

2 cups of Cheerios-Crushed

¾ cup of water

Let this soak for at least 10 minutes

In a separate bowl add:

2 cups of unbleached wheat flour

1 ½ teaspoon of no-sodium baking power

½ teaspoon of baking soda

¼ teaspoon of sea salt

Chop one organic apple into thin pieces

Shred one organic carrot

½ cup of natural unsweetened applesauce

½ cup of wildflower honey

2 teaspoons of canola oil

1 egg white

½ teaspoon of almond extract

 

Mix everything together and pour into a loaf pan that has been lightly sprayed with a non-stick spray.  Bake on 350 degrees for one hour.  Allow to completely cool and drizzle an almond glaze over the top.

Mix ½ cup of powdered sugar, ½ teaspoon of almond extract and few drops of low fat milk.

 

This is a recipe that our dear Princess’ human’s parent use to cook, it is a Eurasian Dish. It is a Potato No Bake Cake which is actually a savory dish, eaten with curries or any spicy hot food maybe a chili.

Potato No-Bake Cake

7" Cake Pan (round or square) x 1" deep

Line with Grease Proofed paper (parchment paper) or use a Non stick cake pan about 1 inch deep

Approx.  2 tablespoons of freshly squeezed lemon juice

3 crushed fresh garlic cloves

¼ inch fresh ginger peeled and grated finely

One large sweet onion or a bunch of salad onions chopped

a lot of black pepper

Handful of fresh chopped coriander or ¼ teaspoon of ground coriander

1 fat green chili de seeded unless you have a cast iron palate

1/2 lb of mashed potatoes cold

 

Combine all ingredients with the cold mashed potatoes, place in lined tin and gently pat down, cover and put in the refrigerator for several hours leaving over night is best. Remove about an hour before serving carefully turn out onto a plate and slice thin.

This dish is delicious with spicy dishes-the contrast of a oven warm curry or chili and the cold potatoes works really well. (This same recipe can be used to encase browned cooked mince forming about 6 good sized egg shaped cutlets, when encased, dip in egg and breadcrumbs and fry makes a great supper dish) usually eat with a salad .
